pins couche´s ROSE´ 2006 essaiIt’s rosé friday again! This week i’m bringing you a fun rosé from Provence, France named Jean-Luc Colombo: Cape Bleue Rosé. Provence style rosés are delicate, bright, and beautiful expressing a lot of rose petal, white blossoms, and fresh strawberry. Jean-Luc Colombo (the winemaker) is considered a “Revolutionary Enologist” by Robert Parker. He works closely with his wife, Anne and daughter, Laure to craft award-winning wines from this region in the South of France.

The color is soft salmon pink with its color and slight pepper notes coming from the 67% Syrah, 33% Mourvèdre grapes used. This wine is medium body with some notes of fennel and black olive and beautiful, powerful, and enticing raspberry and cherry. Provence style rosé, especially this one, is delicious when paired with a variety of foods such as Cheeses, Fried Zucchini Flowers, Mediterranean and Southern French fare. I personally drank this wine as an aperitif paired with some French-Italian inspired tapas. I made a fresh Fig, Tomato, and Garlic Bruschetta topped with a Sweet BBQ Balsamic on top of small Puff Pastry Rounds. This dish was light, simple, and complimented the freshness in the wine.

IMG_9650Rosé is a star this season, and every friday I am bringing you a fabulous rosé thats available in a city near you. This delicate, beautiful, and elegant wine is the perfect spring and summer sip to bring outdoors.

Always remember… eat what you like and drink what you love because your pairing is perfect!
