I usually like to have snacks at work to keep me from getting that 2pm tired and hungry feeling. Have you woken up late for work one day, you’re in a rush, and can only grab an unhealthy snack on the go? It’s not a good feeling and can have you craving unhealthy choices all day. Farmer’s Pantry Cornbread Crisps, and this protein packed bean salad will help keep you full, energized, and help you to keep making healthy choices throughout the day. In the past I have chosen popcorn, crackers, and anything easy to pack in my purse. This is not always the best, so I sought out a healthy alternative that still gives me my desired crunch but also keeps me full and focused. Thats when I found Farmer’s Pantry Cornbread and Jalapeño Cornbread Crisps! These insanely addicting, healthier, chip options are my new favorite summer snack!
When I am at work, I enjoy the Jalapeño and Original ones with my protein packed bean, cucumber, and feta salad. The crisps add that crunch factor, spiciness, and scooping capability I love in a chip, but also taste great with this healthy, fiber driven, cold salad. It’s easy to make and something everyone will enjoy (at least everyone at my work did).

These crunchy, delicious, and filling crisps are always grown on U.S. family farms and are perfect anytime during the day, for travel, hikes or to pack in your gym bag or purse. If you’re thinking, “how on earth did she pair this snack with a wine”, don’t worry… I did!

Why does it pair well? 1 Can Black Beans
1 Can Red Kidney Beans
1 Can Chickpeas
1 Cucumber (seedless)
1 Plum Tomato
1/2 C Feta Cheese
4TBSP Extra Virgin Olive Oil
TT Salt & Pepper
1TSP Vinaigrette *Optional (I prefer Olive Garden dressing, bottled and sold in stores)
Farmer’s Pantry Cornbread Crisps
Dice tomatoes and cucumbers and rinse beans in strainer under cold water. Combine in large bowl with wooden spoon or baking spatula for delicate tossing. Drizzle with oil, salt and pepper, and dressing (optional). Crumble feta, toss, and let sit in the fridge 1 hour or overnight. Enjoy with Farmer’s Pantry Cornbread Crisps!
