I love making Watermelon Caprese Salad in the summer because it’s a delicious way to add something sweet (besides balsamic) to this somewhat savory lunch or dinner side. Enjoy this summer salad with a crisp white wine or bottle of sparkling wine!
Watermelon Caprese Salad
1 Watermelon (I prefer seedless)
16-20 Mozzarella Cubes
10-15 Basil Leaves
1Tbsp Balsamic Vinegar
Method: Using the MERCIER watermelon slicer and corer, slice and pick out your watermelon pieces. Cut them into smaller chunks and place in large bowl. Cube fresh mozzarella and mix with watermelon cubes. Chiffonade or chop basil to break up into smaller pieces and release aromatics into salad. Drizzle with balsamic vinegar, stir mixture together, and chill in the refrigerator for an hour or more. Serve chilled with a chilled bottle of wine!
