Inside the Dominck Hotel in Soho is Spring & Varick Restaurant. This new spot is the perfect place for after work drinks, date night, elegant group outings, and everything in between. The menu offers an array of American fusion options that will have your mouth watering from the second you sit down and start reading the descriptions.
The cocktail and wine lists are playful and pair-able with pretty much anything you order off the menu. I started off with the Grilled Pineapple Margarita and paired it with Cauliflower Roll-Ups. This winning combo worked because the margarita is flavorful and vibrant, with plenty of that delicious pineapple tanginess and a smooth finish from the tequila. The Cauliflower Roll-Ups are a must have and the creaminess combined with the flaky pastry roll up works well as a starter. If you’re into something heartier, you should also try the Octopus, which is delicious and great for sharing too. If you are seeking something a bit more elegant, that will wow the table with its presentation and flavor, then you must try the Steak Tartare with Quail Egg! It’s a delightful dish that’s easy to share and is one of the best I have had in NYC in a very long time.
After some amazing starters, you’ll want to absolutely consider some entrees. The menu here is enticing and eclectic, offering something for everyone no matter their tastes, likes, and dislikes. I decided to sip a Fire & Brimstone cocktail while I looked at all the entree options. This cocktail is great for those who enjoy jalapeno infused tequila! So, basically everything on the menu was calling to me, and narrowing it down to just two was very hard. The burger is instant food porn and is absolutely delicious. It was a difficult choice between the burger and the steak, but ultimately I chose the Hanger Steak which was a wonderful option. The steak was perfectly cooked to medium rare and was accompanied by nicely seasoned french fries. Alongside the steak was another dish that’s out of this world and a must have when dining here. The Squid Ink Pasta with King Crab, Thai Chili, Parmesan, and Cilantro Lime Gremolata is a dish you do not want to miss. It’s colorful, packed with flavor, and worth every single bite!
If you’re still hungry or have even the slightest bit of room after all these appetizers and entrees, stick around for dessert. Here at Spring and Varick they bring your dessert tableside and finish it off right in front of your eyes. The Smokin’ S’Mores Brownie was the sweetest way to end the amazing meal here at this special spot in Soho.
