La Nuit en Rosé is happening in about two weeks, so in order to gear up for this fun filled wine event, I am going to be featuring some stunning Rosé that will be at the event. To kick off June lets start with some beautiful bubbly! This Santa Digna by Miguel Torres is a fine sparkling wine. The Estelado Brut Rosé is dry and crisp with a lot of rose petal, raspberry, and red currant on the nose. On the palate this wine is dry with some striking blood orange and spicy cherry, which paired extremely well with Red Pepper Shrimp, Shitake Mushrooms, and Tomato Medley, over Zucchini Ribbons.
The dish I dressed with some garlic, avocado oil, and pepper, making it simple and stylish with a healthy side. The bubbly was beautiful with this dish which was a great way to show off the wine with some food and not the other way around. Parings are meant to compliment and highlight notes in the wine and dishes, and that’s exactly what this pairing did. The bright berry notes stood up to the crushed red pepper and meaty shrimp, while the bubbles intertwined with the avocado oil and made this dish smooth and sensational.
