This summer is all about cool flavors, fresh ingredients, and tons of fun. Blue Diamond Almonds make for the perfect summer snack by themselves or in any of your favorite foods. These almonds come in all flavors and varieties, but this summer I wanted to spice it up a little with something sweet and savory using these delicious options. The Toasted Coconut Almonds are perfect for salads, in a tropical trail mix, and with some savory dishes like my Toasted Coconut Almond Tilapia; because eating healthy doesn’t mean we have to sacrifice flavor. To accompany the fish I chose Cauliflower Mashed Potatoes and Sauteed Brussels Sprouts. Pair this dish with a crisp white wine such like the Rios de Chile Chardonnay or a Bolla Soave.
For you sweet treat fans that want a little nuttiness and crunch in your dessert take the Blueberry Almonds and sprinkle them into a Crumble. Using Strawberries, Raspberries, and Blueberries, Port wine, Cinnamon, Brown Sugar, and Blueberry Almonds, this dish is a delight! I chopped the Blueberry Almonds and sprinkled them over the crumble just before it went into the oven. This provided a nice crunch to the sweet and gooey crumble. Pair this one with the rest of the port wine (if you have any left) and or the Josh Cellars Legacy, which is perfect for a dessert like this.
