It’s been a while since this Somm really took my Wine Wednesday seriously. I have been staring at this new 2011 Josh Cellars Chardonnay for about a week now, and became inspired when I found a Cornish Hen on sale at the supermarket. It was a match made in heaven, and I was going to make it happen!

IMG_1637The Josh Cellars Chardonnay is clean and bright with aromas of yellow apple, pineapple, and flowers like honeysuckle. This wine is what I would call “My favorite type of Chard”, because it is fruit forward, crisp, and beautiful on its own, but can be a total foodie wine too! While the hen was slowly roasting in a 375° degree oven, I sipped this wine with some nice Nordic cheeses.

The hen was fully roasted and the crispy skin made the wine seem creamier in a wonderful way.  Alongside the hen, were roasted garlic, onions, and fingerling potatoes. Cooking the hen for 1 hour was perfect, as it came out fully crisp on the outside, and juicy on the inside; perfect for this wine! IMG_1638
