Here, I got the inside scoop, a tour of the kitchen, and even got to try chef’s fantastic Pigs Head Bolognese, which is packed with flavor, texture, and is a must order when you visit this restaurant. The specials do change often, and dishes run out, due to chef’s belief of eating from the earth and sourcing everything locally and fresh. The beauty of this concept is that you know what you’re getting, and all the animals they use are humanely raised. In the interview chef expresses how the animals have a personality, and when he uses them in the cooking, he wants you to know and feel the beauty of that animal.
Besides the delicious pasta, you will notice in a previous write up here where I was served homemade Tater Tots with Whiskey Caviar, Smoked Cauliflower, and one of the Best Burgers in Brooklyn! Chef certainly dares to be different, and that’s why his menu is so unique!
